Recipe of the day: Mexican Salsa and Cheese Omelette

Enticing flavours of tomatoes, jalapeno peppers and cheese combine to give a twist to your everyday omelette.

What you need:

For Mexican salsa

2 medium size tomatoes
2 medium size jalapeno peppers
¼ cup fresh cilantro (optional)
Salt to taste

For cheese omelette

2 eggs
1 cube of cheese
Red chilli powder to taste
Salt to taste
A pinch of black pepper
1 tbsp cooking oil

How to make:

1. For the salsa, put tomatoes and peppers on a grill and place over the gas on medium flame. Keep turning from time to time till all are roasted. Allow to cool.

2. Remove skin from tomatoes and cut peppers into halves to remove seeds. Put in a mixer, along with cilantro and salt, and blend repeatedly for intervals of not more than three to four seconds. Take out in a bowl.

3. Break eggs in a bowl and whisk properly. Add red chilli powder, salt and pepper and mix well.

4. Heat oil in a frying pan and add the egg mixture. When it starts to cook, spread a layer of salsa on it and then grate cheese over it.

5. When the base of the omelette gets cooked properly and the cheese has melted, fold it once. Serve hot with toasted bread or enjoy it without any accompaniments.
