Recipe of the day: Bread Aloo Tikki

Straight from my grandma’s cookbook, these deep fried roundels of potato with a smack of spices will make for a crunchy, snacky evening option.

Straight from my grandma’s cookbook, these deep fried roundels of potato with a smack of spices will make for a crunchy, snacky evening option.

Prep time: 10 minutes
Cooking time: 10 minutes
Serves: Two

What you need:

4 medium-sized potatoes
4 slices of bread
1 tsp red chilli powder
1 tsp coriander powder
½ tsp hing (asafoetida)
½ tsp aamchur (dry mango powder)
Salt to taste
Cooking oil for deep frying

How to make:

  1. Boil potatoes, remove skin and mash properly.
  2. Dip bread slices in water, squeeze out the water and mash with potatoes.
  3. Add red chilli powder, coriander powder, hing, aamchur and salt to the mix and combine well.
  4. Heat oil, enough for deep frying, in a skillet. Make roundels out of the mix. Deep fry till they turn reddish brown. Remove from heat and serve hot with chutney or ketchup.
