Recipe of the day: 10-minute pickle

Cucumber and onion tossed in a sweet and tangy mix of garlic, vinegar, paprika and mustard.


Prep time: 5 minutes
Cooking time: 5 minutes
Serves: Two

What you need:

1 cucumber, peeled and sliced
1 medium-sized onion, sliced
1 tsp white vinegar
2 cloves of garlic, crushed
½ tsp red chilli powder
½ tsp sugar
Salt to taste
½ tsp mustard seeds
1 bay leaf

How to make:

  1. Heat a saucepan over medium flame. Toss in vinegar, garlic, sugar and mustard seeds. Let it simmer for a few seconds until sugar dissolves.
  2. Add cucumber, onion, red chilli powder, salt and bay leaf. Still until evenly coated. Remove from heat, allow it to cool and serve either chilled or at room temperature.
