Planning for a weekend cook up? Try this ‘Super Healthy’ Upma!

Here is an interesting version of Upma from my Mommy Jaan’s cook book…

My mommy Jaan loves experimenting with anything that makes a perfect healthy meal. Being from a South Indian family I am fortunate to get elaborate breakfast along with strong filter coffee every morning.

I usually don’t have a problem with having anything in my first meal of the day but Upma is something I am not fond of. Mommy Jaan tried making interesting variations of Upma by giving fancy names but I am never convinced.

Mommy Jaan didn’t give up and last Sunday made a healthy version of Upma with broken wheat also called as Lapsi. I have to admit that it was the only kind of Upma that I finished eating without any cribbing.

Usually, Upma is made out of semolina /rawa but Mommy Jaan’s this version hits the chart for me.

Here is a look what goes the making of this lovely healthy breakfast meal…

Ingredients

2 cup of Broken wheat / Lapsi

2 Onion sliced  

2 Green chilies copped

Half cup boiled green peas

One tomato sliced

One small piece of ginger

One small carrot chopped

Two cups of water Salt to taste

For Seasoning

2 tsp – Mustard seed

2 tsp – Urad dal

2 – Dry whole red chilies

3 to 4 sprigs- Curry leaves

One tsp of cooking oil

Method

Heat oil in a kadai / wok, add mustard seeds, urad dal and crackle mustard seeds.

Then add red chili, curry leaves and fry for a second.

Add onion, green chili, ginger and roast it for few mins.

To this add tomato,boiled green peas and chopped carrot.

Then add broken wheat and fry for two to three minutes on slow flame.

Add 2 cups water to the kadai/wok close with tight lid and cook on very slow flame.

Cook for 10minutes and then open lid and stir well.

Lastly garnish it with grated coconut.

Serve it with green chutney.

Try this on a Sunday morning and stay healthy!
