Potatoes And Chapatti Are Not Boring Anymore – Innovative Recipes For Office Lunch!

We all know how frequently potatoes are found in our lunchboxes. Along with chapattis, they make for the easiest option for office lunch too!

But aren’t you tired of eating the good old aloo ki sabzi with roti thrice a week? Let’s add some twist to this combination and see how we can create different dishes out of this otherwise common pairing.

Potato-filled Rolls

One of the easiest and tastiest combinations, this dish just cannot go wrong for anyone on this planet! In a bowl, mash two boiled potatoes and add salt, black pepper, one finely chopped onion, two cloves of crushed garlic, salt to taste and some oregano. If you want you can also add sautéed red and yellow bell peppers (finely chopped) and finely chopped carrot.

Now take a chapatti and spread some mayonnaise on one side. Take the mix and put it in the center of the roti. Now sprinkle some chat masala and roll it. Rock the office lunch in style with these yummy rolls!

South Indian Style Potatoes with Chapatti

Add a new dimension to the sukhe aloo by using some spices from down South.

Boil potatoes and cut them into small pieces. In a pan, take some vegetable oil and add mustard seeds when it is hot. To this add a pinch of asafetida and some curry leaves. After about half a minute, add 1 tsp of turmeric, red chilli powder and coriander powder. Now add the boiled potatoes and cook for two minutes. Now add some amchoor powder to the potatoes and cook for another minute.

Pack them with the nutritious rotis for a healthy lunch at work!

Desi Potato Tacos

This is a great way to turn your chapattis into delicious tacos.

Don’t use fresh chapatti for this one. Use the one that has been made at least 6-8 hours before.

For the stuffing, boil two potatoes and mash them with 150 gm of cottage cheese.

In a pan, heat some vegetable oil and add some cumin seeds along with ginger garlic paste and one finely chopped onion. Fry them till golden brown and then add one chopped tomato to the pan. Now mix 1 tsp each of red chillipowder, coriander powder, turmeric powder and garam masala. Add salt to taste and cook the mixture until the tomatoes turn soft. Add the potato-paneer mix and cook for another 2-3 minutes. Take the pan off the burner and spread the stuffing on half of the roti.

Fold the roti to form a half circle. Now take some oil in a pan and fry the desi taco till the roti turns golden brown from both sides. Enjoy the taco with ketchup or coriander chutney!

Curd Potatoes with Chapatti

This is one recipe that I personally find absolutely lip-smacking. Boil potatoes and cut them into cubes.

In a pan, heat some oil and add cumin seeds along with two bay leaves. Now add ginger-garlic-green chilli paste to the pan and fry for 2 minutes. If you like peanuts, add coarsely crushed peanuts and some sesame seeds to this mixture. It’s time to add red chilli powder and some turmeric powder now. Mix well and then add beaten curd into the pan. Make sure the curd is fresh and not sour.

Cook for another 2-3 minutes before adding the potatoes. Stir well and cover for 3-4 minutes. Stir occasionally and then in the end, add finely chopped coriander. Pack this delectable dish with rotis to your office for a delicious lunch!
